Greek Pasta Primavera

Ingredients:
  • 1 Box Bow tie Pasta
  • 1 Zucchini Squash (sliced)
  • 1/2 Red, Green & Yellow Bell Pepper (sliced)
  • 1 C. Button Mushrooms (sliced)
  • 1 Cup Broccoli Florets
  • 1 Bundle of Asparagus tips
  • 1/2 C. Red Onion Sliced 
  • 1/4 C. Olive Oil
  • 3 T. Greek Seasoning
  • 1/2 C. Parmesan Cheese
Dressing:
  • 1/4 C. Fresh Squeezed Lemon Juice
  • 1 t. Fresh Oregano (minced)
  • 1 t. Black Pepper
  • 1 T. Greek Seasoning
  • 2 T. Red Wine Vinegar
  • 3 T. Italian Dressing
  • 2/3 C. Olive Oil
  • 1 t. Fresh Lemon Zest


Directions:
  1. Preheat grill to medium-high heat.
  2. Boil noodles and toss in marinade
  3. Toss veggies in olive oil and Greek seasoning
  4. Lay flat on a cookie sheet 
  5. Grill on sheet for about 20 min or until veggies reach desired tenderness. (shaking occasionally)
  6. Mix veggies in with pasta and sprinkle with cheese .
  7. Serve Warm
( I added grilled chicken and shrimp to mine)
